You know you’ve done something right, when you make staff meal with only four ingredients and get compliments! Well, somehow I managed to accomplish this last night. As many of you know, I work here. And often, I find myself making staff meal for the PM crew. Tuesday nights are tough though. It’s the first day of our week, and there really aren’t many leftovers to pull from. But there’s almost always extra chopped garlic around, since we chop fresh garlic daily.
So this is what I did
Water on to boil. Salt in the pot. Water boils, pasta in (I used penne rigate). After about 5 minutes, put a lot of chopped garlic along with plenty of olive oil into a saute pan big enough to hold all the pasta, and turn it on low. As it’s heating gently, add lots of cracked black pepper. Heat the pan of olive oil, garlic and pepper slowly. Stir regularly, watching the garlic carefully. It will gradually begin to turn golden, but just barely golden. By this time, the pasta should be done. Drain the pasta and pour the pasta into the saute pan with the garlic-pepper mixture. Toss, and eat! MMMMmmm. It will be spicy in a warm, mouth-filling way. I didn’t even top it with cheese, and I ate a whole bowlfull.
